Lunch At Grandma's House

I had lunch with my Grandma last Wednesday.
It was really fun!
And she made another great lunch, including this yummy caramel apple pie.
I had two pieces!
And then I took a nap.
Ha ha

It tasted healthy......in a good way.

Sunday Dinner At Grandma's

I had dinner at my Grandma's house on Sunday.
My whole family went to visit Grandma - all 3 of us!

My Mom brought the dinner, so Grandma wouldn't have to cook.
And so she could eat something different.
It's always nice to eat someone else's cooking occasionally.
Above is the yummy salad with avocados, peppers, feta and tons of yummy veggies.
So nice to eat something fresh in the winter!

We also had lasagna.



And this yummy Butterscotch Pumpkin pie that my Grandma made.

Anything Pie and Roasty Toasty Potatoes

Anything Pie
You should make this pie when:
You want to impress
Uninvited guests
Mother-in-law
You just got home from work
The cupboards are bare.
~
You can put whatever you want/have on hand into this pie.
But this is what I did...
I started with the same sauce that I used for the Salmon en croute
~
Some cream cheese, spinach, dried onions, dill, salt and pepper and a little cream.
Blended up.

I used the Secret Family Recipe for the crust.
1 cup flour
1/2 cup butter
1/4 cup filled with 1 egg and a little white wine

Rolled out the dough.
It will make a top and bottom crust.
Roll it out really thin.
I used a greased round cake pan as my pie pan.

Leftover Roasty Toasty potatoes and 1 cup of frozen veggies.
Roasty Toasty potatoes are a double leftover.
I started with leftover baked potatoes - sliced them up and soaked them in 1 cup of fig infused vinegar.
Pre-heated the oven to 400 F.
After 15 mins I tossed the potatoes with savory, thyme, oregano, salt and pepper and a little olive oil.
Baked for 20 mins.



Added spinach sauce.




Covered with top crust and washed with egg wash.




Baked at 350 F for 20 mins.
Just until the crust was brown.

Lunch With Grandma

I visited my Grandma last week.
She gave me a cute brown sweater that she had knitted
and cooked a wonderful lunch.

The main meal was Tater Crust Tuna Pie, mashed potatoes and green beans.
It was so yummy!
Tater Crust Tuna Pie
Crust: 1 cup flour
1/2 cup potato flakes
1/2 cup butter
4 Tbs. ice water
1 can 2.8 oz french-fried onions - divided
Filling: 3/4 cup potato flakes
1 cup shredded cheddar cheese - divided
2 Tbs. chopped green olives
1 can 6.5 oz tuna - drained and flaked
1 can cream of mushroom soup
1 egg
Combine flour and potato flakes, cut in butter until crumbly.
Add water, 1 Tbs at a time, until dough is moist enough to hold together.
Press pastry over bottom and up sides of ungreased 9 in or 10 in pie plate.
Set aside 1/2 cup of french fried onions.
Sprinkle remaining onions into pastry shell.
In a bowl, combine all fill ingredients except 1/2 cup of cheese.
Spoon filling over onions.
Bake at 350 degrees for 20-30 mins.
or until crust is golden.
Sprinkle with reserved cheese and onions.
Bake additional 5-10 mins or until cheese is melted.
Let stand 5 mins before cutting.
6-8 servings.



Then we had a delicious squash pie.
It's just like pumpkin pie, but fluffier and lighter and made from my Grandma's homegrown squash.


And then we had blackberry/apple pie.
Hee hee!
We like pie.
My Grandma's blackberry crop was really good this year.
