Prize For Someone

Hello readers

Rose Water Sugar Cookies

Rose Water Sugar Cookies
~
3/4 cup butter (1 1/2 sticks)
3/4 cup white sugar
1/2 cup brown sugar
1/4 cup light corn syrup
1 Tbs rose water
1/4 tsp cardamom
1 1/2 tsp. baking powder
1/2 tsp baking soda
1/2 tsp salt
1 large egg
2 1/2 cups flour
1/4 cup colored sugar, for coating
~
-Preheat oven to 375 F degrees. Lightly grease 2 baking sheets.
- Beat together all ingredients, excluding flour.
-Stir in flour.
- Drop the dough by the tablespoonful into the colored sugar, rolling the balls to coat them. Place them on the prepared baking sheets.
- Bake the cookies for 10 mins. until they are just barely stating to brown, they'll look soft. Remove them from the oven and allow them to cool for 5 mins. then transfer to a rack to cool completely.

These cookies are very yummy.
They combine my two favorite flavors: cardamom and rose water.
If you have never tried rose water - it is amazing!
It adds an addictive quality to these cookies, increasing the buttery flavor and adding a sweet aftertaste - that makes you want to eat more!

Cardamum Sugar Cakes

Cardamom Sugar Cakes
I love cardamom. It is especially wonderful in these light-as-air sugar cookies.
Watch out for the unusual combination of sour cream and baking soda.
1/2 cup sour cream (not nonfat)
1/2 tsp. baking soda
1/2 cup butter (1 stick)
3/4 cup sugar
1 large egg
3/4 tsp. salt
1/2 tsp. nutmeg
1 tsp. cardamom
2 tsp. vanilla extract
1 1/2 tsp. baking powder
1 1/2 cups unbleached all-purpose flour
Coarse sugar, colored sugar or sprinkles for decoration.
In a small mixing bowl, whisk together the sour cream and baking soda. Set aside.

In a large bowl, cream together the butter, sugar,egg, salt, spices, vanilla and baking powder. Add the sour cream mixture and blend well. Add the flour, blending until well combined.

Pre-heat the oven to 400 F and lightly grease/parchment/silpat 2 baking sheets.

Drop the dough by 1 Tbs. into the sugar, roll in sugar and place on baking sheet.
Work quickly or the butter will melt.

Freeze rolled sugar covered cookie dough.
~
Bake for 10 mins. - Watch carefully!!
After removing them from the oven, leave the cookies on the baking sheet for 3 mins.

Lemon YumYums

These are the easiest cookies to make.

Three ingredients!

Perfect when you have unexpected guests, like your mother-in-law, and you want to impress.

Or if you forget about the bake sale, that starts in an hour.

Lemon YumYums

Ingredients:

1 pkg cake mix

1 stick of cold butter

2 large eggs

In a food processor blend cake mix and butter for 2 mins. Add eggs, mix until thoroughly combined, another 2 mins.

With wet hands roll the batter into walnut sized balls, about 1 Tbs of batter each.

Place on greased cookie sheet and bake at 350 degrees for 10 mins., until light golden brown on edges. Cookies will still be soft in the center.

Optional: Roll cookies in powdered sugar before baking.

These are so good! Soft and chewy with crispy edges.

White Chocolate Macaroons

I made up these macaroons after I had someone die on me at work.
I was too upset to sleep, so I stayed up and baked.
These are really, really easy and
really, really good.
When I took them to work they disappeared in less than 5 mins.
I love macaroons and these are the first homemade ones I have found that are soft, chewy and full of coconut flavor.

White Chocolate Macaroons
~
2 large/jumbo eggs OR 4 small/banty eggs
1/4 tsp cream of tartar
14 oz can of sweetened condensed milk
12 oz bag of white chocolate chips
14 oz bag of shredded coconut
Whip eggs in an electric mixer for 5 minutes, then add 1/4 tsp cream of tartar. Whip for another 5 mins. until the eggs are frothy.
Then mix in 14oz can of sweetened condensed milk.
Next mix in the coconut and chocolate chips.
Heat oven to 350 degrees.

Now this is the fun part!
To get the eggs to bind to the coconut you need to press the batter together...
So take walnut sized portions of batter and with wet hands press the mixture to form a ball.
Place ball onto a greased/parchment/silpat covered baking sheet.
Repeat with the rest of the batter.
Bake for 10-15 mins until the macaroons are toasted golden brown.
If you cook them for too long - don't worry - they are still soft and delicious.
