These are so good!
You have to make them.
I didn't think I would like them, but I've eaten about 10 now!
They are crisp on the outside, moist in the center and sweet and salty.
You can eat them out of hand like a cookie or add a sauce and eat them with a fork.
3 cups summer squash or zucchini
(I'm partial to the "Butterstick" variety)
1 cup shredded cheese
2 eggs beaten
1/2 cup flour
1 tsp baking powder
pinch salt
pinch pepper
Bake at 375 degrees for 15 min. or until the
patties are toasty brown.
Those look very yummy... I learned a new recipe this summer on BYC similar to this. But I use squash and zucchini, we ate alot of them this year and I cooked up some and froze them for winter... used 1 bag last night for dinner, I like putting some ranch dressing and a tomato slice on mine :)Next summer I'm going to stock up on ALOT more for winter!

Now I'm standing next to the plant, toe tapping, waiting for it to grow a few more!
Its 2 cups of zucchini/squash
ReplyDelete1/2 cup chopped onion
1/2 cup flour
2 eggs
handful of shredded cheese, whatever you have
1/2 cup Parmesan (sometimes I dont add this)
salt, pepper and I like to put basil in ours
(or you can use old bay and it will taste like a crab cake)
oil to cook with
Mix everything in a bowl (not the oil). Put oil in a skillet and heat... then add spoon full of mixture and fry on both sides
These are very good, plus you can freeze them, then warm them back up in oven :) I ate 5 leftovers today!
My wife's Grandmother told me about these a few years ago, and we love them. We usually add onions and peppers diced, and some 'Montreal Steak Seasoning'....great with honey mustard!
